Where possible, I think it is better to make a reservation in advance of your visit. However, as we do not accept reservations for Sushi Ishijima, please expect some waiting time on the day of your visit.

1) I think that it is better to wait outside until the time of your reservation, because your table is not likely to be ready before the time of your reservation.
2) It is not impolite, so please do so without worrying.
3) I do not think that is a problem at all. There are some sushi chefs who do not pay much attention to foreign customers, so it may be a good strategy to present your sushi chef with a small gift and make him feel that he has to accommodate you properly.
The type of fish used for nitsuke varies between the seasons. In regards to "Takahashi," their Kinki-fish nitsuke is exceptionally popular during the winter time. When it comes to Kinki, the entire fish is said to be served at all times, but this apparently may not be the case with other fishes (varies depending on inventory).
Anago should be served throughout the year. I believe you'll be able to eat it at any time (although summer is the best season for eating the most delicious anago).

Depending on what steak cuts are chosen, there should be four or five courses prepared. (The content of all courses without steak is the same.) I am planning to make the reservation about one month in advance. However, if it will be for only one person then we may have the flexibility to wait a little longer (until two weeks in advance for example).
